Georgia is not only the oldest wine-producing country in the world. They have also been making wine there using the same method for 8,000 years: in qvevri. These are enormous earthenware vessels that are buried in the cellar of the winery. The grapes are put in, skins and all. Once fermentation is complete, a lid is placed on the qvevri. It is only months later that the lid is removed again and the wine is taken out. The skins and seeds have sunk to the bottom. The wine has filtered itself. This oldest method of winemaking is UNESCO-protected cultural heritage.
