This Regolo Valpolicella Ripasso has its origins in the rolling hills north of Verona, in a region that benefits from an exceptionally protected weather. This is partly made possible by its location near Lake Garda, the largest freshwater source in Western Europe, and the protection against northern cold winds by Monte Lessini. The vineyards are planted on soil rich in marl. The most promising grape bunches are carefully selected already in the vineyard. A gentle pressing is followed by cold soaking of the skins for 8 to 10 days, after which regular fermentation takes place. In February the wine undergoes a second unique fermentation, using the skins of the renowned Amarone wine. This method not only enriches the young Regolo Valpolicella Ripasso with a more robust structure, but also envelops it with the complex aromas of dried fruit, typical of Amarone. The wine is then aged for 18 to 24 months in oak barrels of various sizes, followed by further aging of at least 6 months in the bottle after bottling.
